Edith Cowan University in Australia offers a Graduate Certificate of Education in Adult Literacy and Numeracy (click on it on the left) through external study. The four courses are: Teaching Reading and Writing to Adults Planning for Adult Literacy Learning Issues and Development in Adult Literacy and Numeracy Teaching(includes Practicum) Teaching Numeracy to Adults I imagine that you could take just one of the courses - it's worth checking into it!
