The publisher requires that all recipes be tested. (This is not a common requirement among cookbook publishers, oddly enough.) With prior cookbooks, Marina and I have tested half or more, and we've farmed the rest out to family and friends, with no reward other than our grateful thanks (in print as well) and a free signed copy of the book when it emerges. Because of the unexpected interest this thread has generated here, I'd like to extend the offer to forum readers who will take this seriously, try something out, and provide feedback on clarity of instructions and opinion on the result.
