I'm considering going back to school to get my Masters in Adult Education and was wondering what online schools people recommend? Also how does the job market look for someone with a masters in adult education? I'm currently a special education teacher, but want to start working with adults.

What subject would you expect to teach? Competition is stiff and you would have to be an experienced expert in the subject matter you would be teaching. In your case, you might find the best chance in finding employment as a trainer of special ed teachers. I would think that a graduate degree in special ed would serve you better than a degree in adult education. I know you are probably sick of that field, but it may serve you better.
Schools nowadays train adults and out-of-school youth with technical-vocational courses. It would be a good choice. However, there is a greater need for special education teachers.
