This was suggested awhile ago, and my current obsession with The Food Network inspired me to get this going. If you have a favorite family recipe or something you've tried yourself, post it here. The only requirement is that you've actually made it and tasted it yourself. My first contribution; I'm kitchen-impaired, so if I can do this, anyone can. I got this recipe from The Food Network website, and I've gotten rave reviews whenever I've made it for family or friends; Baked Macaroni & Cheese Ingredients 1/2 pound elbow macaroni 3 tablespoons butter 3 tablespoons flour 1 tablespoon powdered mustard 3 cups milk 1/2 cup yellow onion, finely diced 1 bay leaf 1/2 teaspoon paprika 1 large egg 12 ounces sharp cheddar cheese, shredded 1 teaspoon salt Fresh black pepper Directions Preheat the oven to 350 degrees. In a large pot, melt the butter, then whisk in the flour and powdered mustard, keeping it whisked for about 5 minutes until it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for 10 minutes, then remove the bay leaf. Cook the macaroni to al dente (about 6 minutes) Whisk the egg in a small bowl, then slowly add 2 large spoonfuls of the hot mixture to the bowl while whisking the egg, to make sure the egg doesn't cook, then add the egg/mixture formula back into the large pot and mix well. Add 3/4ths of the cheese and mix well. Season with salt and pepper. Fold the cooked macaroni into the hot mixture, then pour it into a 2-quart casserole dish, and top with the remaining cheese. Bake in the oven for 30 minutes, then let it rest for 5 minutes before serving. Experience What I do when I make it for my kids and their friends is omit the onion and reduce the powdered mustard to 1/2 tablespoon. I also use more cheese (and a bit more macaroni), I buy 2 bags of Kraft Triple Cheddar and use both bags.....I've never heard someone complain that there is too much cheese with mac & cheese, and the 3 different types of cheddar makes for interesting flavors. Okay...that's it as far as my culinary abilities so far, beyond the propane grill and the microwave oven, although I want to learn more.
