University of California College (sound close enough to be confused with UCB, or UCLA)

Pacific Christian University (nothing looks better than selling religion in a for profit college).

University of the West Coast.
(sounds big)

Substitute "University" for "Baking Company"

I once did a catalog parody in the name of Catatonic State University. Its motto, rendered into bad Latin, was "Cheap Fast and Easy."

I believe every dead president has been taken other than Nixon.

There's a thought. What would the team name or mascot be for Nixon University?

On the other hand, they started a school in a remote village where there was a Bridge over the river Cam, and it did OK.
