South African Theological Seminary offers 3 options for the MTh. The research and/or integrated option would allow you a large degree of freedom when it comes to a specific field or topic. Two of the sample "majors" for the research MTh are Historical Theology and Church History, for example.

If you are looking for a more traditional, course driven curriculum, I'm not aware of anything. The closest I'm aware of would be the either the MA in Religion or the MA in Theological Studies from Liberty, both of which have Church History options.

A final possibility would be Baptist Bible College and Seminary. They offer a MA in Bible. As I recall, there are 4 required courses in the 10 course degree plan. The other 6 are electives that could be used to customize your desired concentration/major.

Another thought, depending on the perspective you want to study from (anthropological, archeological, theological), a Biblical Studies option may work for you. Courses in these degree plans typically cover a lot of history, including the origin of the book(s), intended audience, geography, cultural influence, etc. A MA in Biblical Studies, if that works, is pretty easy to find.
