I'd suggest trying the American Culinary Federation's CEU page. It's updated often, and every now and again you'll find online classes. If this person doesn't already have a certification, I'd suggest completing the 30 hour Nutrition, 30 hour Sanitation, and 30 hour Supervision requirements and go for culinary certification. All 3 are offered online at any number of schools (as CEUs) or at any NA/RA college for credit. Oh, and seriously, THE way to add excitement to a culinary resume is working somewhere/for someone famous. James Beard winners are a plus.
Hi Jennifer, Wish the James Beard option could happen. Daughter already has some certs from Cornells e-college but needs something with a huge name recognition factor. First resumes will go out next week but it will be an ongoing process. Thanks. Hille
It's not too late to do a job shadow. Seriously, I don't know where she lives, but call the restaurant and ask the chef if she can come shadow for a week. I've required this of my students for years. In my experience, if she asks the right person and has enthusiasm she's got a 75% chance that they'd say yes. I've had students in excellent restaurants under excellent chefs- names you'd know. This isn't an education-valued industry, it's a work-valued industry. I can't imagine a chef who'd be impressed with an eCornell cert. Sorry.
