Your questions are quite broad, but generally speaking, online degrees (as long as they are from a regionally accredited school) are considered just as good as traditional degrees from an employer's perspective. Of course, some schools will have better reputations than others in the online world (ex, University of Phoenix or DeVry are so well known as "online schools" that some employers may see them derisively) so it's a good idea to research any online school you find. A school that also offers in-person classes at their own campus can sometimes add credibility to potential employers.

Re an online associates degree in hotel & restaurant mgmt, Penn State offers one:

Don't believe that a college degree alone will set you apart - experience, smart positioning and networking will do more. Additionally, diversity plays a role with some really talented professionals as it relates to late bloomers – Referring to programs such as Phoenix, Thomas Edison and so on. (Don’t look down on someone that can provide value to a business or wants to grow)

My suggestion is to find someone in your field that you admire and see what has worked for them (past jobs, degrees, etc.)

Last word, (free no charge) - looks for an employer that will pay for your education. DON'T get those Private loans.....

    Welcome to degreeinfo.com.

Since you live in California you could start your online studies by enrolling in a course offered by a California Community College – tuition is only $26 per unit (plus a few dollars for some irritating fees). To see how you handle online study I suggest you first enroll in a course that either interests you or one that you have some knowledge of.

I have found that Coastline CC is one of the easier colleges to sign up with – the courses offered this semester are listed here:
    http://dl.coastline.edu/
Coastline offerings include nutrition which may fit in with your goals.

The California virtual campus lists most on-line courses offered in California

Rather than look for an associates degree in hotel and restaurant management I would suggest that a business degree (with perhaps some electives in hotel or hospitality) might work for you plus give you more flexibility in the workplace. Once you get an associates see where your career is headed then sign up for an appropriate BS degree.

One approach to earning a degree is to earn credits at a variety of colleges then transfer them to one of the big three colleges (Excelsior, COSC, or TESC). I earned my BS degree this way and found Excelsior to be the most flexible college in what I could study.

Keep asking questions and you will get useful answers.
