I am interested in poetry as well. In the MA Theology program I did through Australian Catholic University there was a course in Hebrew Poetry. I believe I was the only student to sign up for the course and it was subsequently withdrawn due to lack of interest. I had already bought the course text book, which is very good by the way, because I thought everyone loved poetry. I don't know if it is currently offered.
