I have a friend who was part of a catholic religious order. He has made cloistered studies of history, philosophy and theology for more than 15 years, he left and now has no degree but you can easily see he knows a lot, id say much more than a Phd. Is there any way he could get the opportunity to go into a masters or doctorate without a bachelors? he has written several books
during the 15 years and could certainly write a thesis quickly with all the bibliographical material he has, anybody could help him?

He might try getting a bachelor's degree from Excelsior, TESC or COSC through testing or portfolio assessment first. And then he won't be limited on his choice of graduate programs.

    There is no shortcut.

    jra,
It sounds like your friend has all it takes to demonstrate academic proficiency at a high level. Please caution him to stay away from anyone who offers to grant a PhD based on past work, however. It will be useless and he will have shortchanged himself in the process. As suggested by anthonym, there are properly accredited universities and schools that can verify his knowledge in a rapid way but it is still necessary to follow the yellow brick road to Oz.
Realize also that the undergraduate degree is meant to be a foundation that includes all those "distribution requirements" or classes from a variety of disciplines. Despite his depth of knowledge in certain areas, he may need to fill in a few gaps and I suspect he would find that rewarding. I wish him all the best in his academic adventures.
