Embry-Riddle has a meteorology course - this was one of my toughest courses in the amount of work I had to do (a feeling expressed by felow students) -- but very interesting and informative. The class I took had both BS and MS students taking the same class, but with relaxed requirements for the BS students. I am not sure whether ERAU allows one to take individual courses by DL.
Mississippi State University has a Broadcast Meterology and Operational Broadcast Meteorology program. It is done by distance learning. Two of the meterologists in my town(Houston) have completed this program. It is for those who want to take it for fun or career. It is not math intensive.

If I got this degree, they'd finally be proud of me! Kidding aside: What an interesting set of options in this thread. Some of my parishioners (farmers) have expressed an interest in doing some formal work on weather studies. Something here might be just the ticket for them. Thanks to all.

The University of Kansas correspondence course is award winning! If you want lab or something more advanced, look at Oklahoma State U or the University of Oklahoma. All of the above are prime research institutions on severe weather. -Orson
From your username I gather your major is in aviation? Brigham Young University has an online meteorology course which was approved for my meteorology requirement at Thomas Edison State College.
