    Is it do-able?

I would like to earn a BSBA degree from Excelsior... and then apply to Various grad schools.

    ( practically the top 15 from JoAnn's list )

As long as I have a competent CS GRE scores, work related experience, and the certifications to back up my knowledge... will the fact that I have a non-technical undergrad degree prevent me from participating in a technical MS?

I guess you are the typo king. The link has .htmi at the end instead of .html!

I've seen people with weak GPAs, zero work experience, zero certifications, and zero GRE CS Subject exam get in. They also had degrees in everything non-technical from art history to zoology.

Sometimes it was only a conditional admission, but they got in. Any missing pre-req courses (like calculus) they were allowed to complete along the way. They also needed to take the general GRE.
